Cooking method:
1 Gently heat the olive oil in a large pan, put green onions and garlic. Sauté until transparent. To mix the spinach and cook until leaves are tender. Remove from heat.

2 In a bowl, mix the parsley with feta, ricotta, eggs and nutmeg. Sprinkle with salt and freshly ground black pepper. Drain excess liquid from the spinach stew. Add it to the cheese-egg mixture.
